Spinach Miso Noodle Salad

This recipe is one that came about on accident one day in my kitchen when I had to throw something together before practice but couldn't find "any food" in my fridge. It's a super easy salad to make that is filling, unlike so many other salads I've had before. At only 280 calories and about 10 minutes later, you'll have a meal that will hold you over until after class, practice, work, or just a netflix binge!


Ingredients:

- Dole Spinach Miso Crunch Salad Mix (1/3 of package)

- Shirataki noodles (1/2 of package)

- Plant crumbles (1/3 of package)

- Optional: liquid aminos (or any soy sauce/ substitute of your choice)

  1. I first start off by heating the plant crumbles over a stove top for about 6 minutes. A microwave works too, but I prefer the stove if I have enough time.

  2. I then drain and rinse the noodles and split the package in half, adding one half to my bowl and the rest in the fridge.

  3. By this time, the 'meat' is ready, I separate it into three servings and add one to a bowl with the rest in a container for later.

  4. At this point, sometimes I will add liquid aminos to the meat and noodles, but it depends on the day!

  5. I top it off with the spinach, toppings, and some dressing!
